Gluten Free Blueberry, Oat & Seeded Breakfast Muffins

These are great on the go, and taste great even when you don’t fancy eating in the morning!

I used a Phil Vikery recipe, however added lots of seeds.  Using seeds and sunflower oil instead of butter, makes them a tad healthier than standard muffins.  Bonus!

Gluten Free American Style Pancakes with Maple Syrup and Home-made Blackberry Jam

I used a Phil Vikery recipe (Gluten Free Baking).

The wonders of buttermilk; it really does make a difference.

Gluten-Free American Style Pancakes with Maple Syrup and Home-made Blackberry Jam

Ingredients
120g rice flour
1/2 tsp baking powder
Pinch of salt
1 egg
1 1/2 tsp sunflower oil
50g unsalted butter (melted)
284ml buttermilk
Recipe
Place the rice flour, baking powder and salt in a mixing bowl. Place the egg, sunflower oil, melted butter & buttermilk into a jug and whisk well together.  Gradually add the wet mixture to the dry ingredients; stirring well between each addition. (The result should be a loose/thick batter)
Heat a small amount of oil in a pan and spoon 4 tablespoons of the batter into a large frying pan to make 4 small pancakes.  These take roughly 2-3 minutes on each side.  Flip the pancakes and ensure they are lovely and brown on each side.
Stack up and add your favourite toppings! I chose my home-made blackberry jam with maple syrup (I have a sweet tooth).  Alternatively; chocolate & banana, berries & yoghurt, lemon & sugar, bacon & maple syrup….go crazy!

Gluten free peanut butter & fudge cookies

Simple, quick to make & absolutely delicious.

Ingredients; peanut butter, dark chocolate, fudge, caster sugar and an egg…..I think that says enough!

Gluten free caramel shortbread

It definitely looks pretty, however was quite unsuccessful!  I have tried this recipe twice now and both times the caramel has not set.  An eat with a spoon situation.  I also did something wrong with the shortbread, which you could hardly cut with a knife let alone your teeth!  However it does taste amazing and last time the shortbread did work.

Some tips for making the caramel would be much appreciated.  Possibly the old fashioned way of cooking the condensed milk in the can?!
