Healthy Gluten Free Breakfast Smoothie

Ingredients
200mls Skimmed milk
1 tspn Golden linseed’s
50g Frozen blueberries
1 Small banana
25 g Gluten free (non-contaminated) oats
Method
I use a hand blender to prepare my smoothies.  Firstly I blend the milk on its own - as this makes it a little frothy and thicker.  I then add the linseed’s - as ideally these need to be broken as you do not absorb their goodness if they are whole!  Add the blueberries & banana and blend until smooth.  Using frozen blueberries makes the smoothie cooler.  Finally add the oats prior to the final blend. 
End product breakfast in a smoothy containing plenty of good CHO, protein & fibre.

Healthy Gluten Free Breakfast Smoothie

This is so quick & easy to make - great if your in a rush in the mornings like myself, making breakfast being the last priority.  This smoothie contains gluten free oats, fruits, linseed’s & milk - making it a well balanced breakfast to start your day; being low Gi, full of ‘good CHO’, protein, fibre & very low in fat.  I often pop this into a drinks bottle so it is a breakfast on the go.  Tasty, healthy, quick & easy, rejuvenating breakfast - perfect!

Gluten Free Blueberry Breakfast Muffins

It is always nice to be able to eat a true classic that is gluten free.  These blueberry muffins are really moist, though not too sweet so are great for breakfast or as a mid-morning snack.  I often make these in batches and freeze them, for when I am running late.

Gluten Free Blueberry Breakfast Muffins

Ingredients

200g gluten free pure oats
284ml carton of buttermilk
125g caster sugar
150ml vegetable oil
1 egg
1tbsp glycerin
200g gluten free flour
1 1/2 tsp baking powder
1/2 tsp xanthum powder
1/2 tsp bicarbonate of soda
75g frozen blueberries
50g mixed seeds (pumkin, sunflower & linseeds)



Recipe

Preheat the oven to 200˚C and place 12 muffin cases into a muffin tray. 
Place the oats, buttermilk and sugar in a medium mixing bowl and leave to settle for 20 minutes. 
Whisk the oil, egg and glycerine in a jug and then add to the oat mixture.  Stir in the flour, baking powder, xanthum gum and bicarbonate of soda.  Finally add the frozen bluberries and seeds and mix well.
Spoon the mixture into the muffin cases evenly.  Bake for 15 minutes or until well browned and risen and cool on a wire rack.

Gluten Free Oaty Granola

Ingredients

2 tbsp vegetable oil
125ml maple syrup
2 tbsp honey
300g rolled oats
50g sunflower seeds
2 tbsp sesame seeds
2 tbsp linseed’s
50g pumpkin seeds
100g flaked almonds
100g dried cranberries
100g dried dates
50g desiccated coconut

Recipe

Preheat oven to 150˚C. Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients and mix well.
Tip the granola onto two baking sheets and spread evenly. Bake for 25-30 minutes, occasionally mixing it. Remove and leave to cool.
 Serve with yogurt and fruit for a superb breakfast.

Gluten Free Oaty Granola

This is another really tasty gluten free breakfast option.  The coconut really comes through and makes breakfast a little more interesting.  I suggest serving with you favorite yoghurt.

Gluten Free Strawberry Cupcakes with Strawberry Butter Icing

A little surprise in these; I popped in a fresh strawberry prior to cooking….worked a treat - and you friends wont even realise they are gluten free!

Gluten Free Cheddar & Bacon Scones
Ingredients
300g Gluten free flour
75g Butter
Pinch of Salt
2 tsp Xanthan Gum
3 tsp Baking powder
2 Medium eggs
75g grated cheddar
4 slices of bacon (fat removed, grilled and finely sliced)
125ml skimmed milk
Skimmed milk for brushing.
Recipe

Preheat the oven to 180˚C/gas mark 4.
Place the flour, butter, salt and xanthan gum in a bowl and rub together until you have the consistency of fine breadcrumbs (similar to a crumble mix).  Add the baking powder, eggs, cheese, bacon and milk and use your hands to mix together to form a dough.
Dust a work surface with cornflour and gently roll out the dough to 2-3cm thick.  Using a circular cutter, cut out 10-12 scones.  Place on baking trays. brush with milk and bake for 10-15 minutes.
Once cooked, remove from the oven and cool on a wire rack.
Cut in half with a spread of butter to serve or eat as they are.

Gluten Free Cheddar & Bacon Scones

There really is not enough savoury gluten free options nowadays.  These scones are not only good as a snack but another breakfast option too.  They are packed full of flavour and a classic picnic item of mine.
